Roasted Chickpea & Broccoli Burrito

Tortillas

Yellow Onion - 1 large

Red Bell Pepper - 1

Broccoli - 1

Chickpeas - 3 cups

Olive Oil - 3 tbsp

Soy Sauce - 2 tbsp

Chili Powder - 2 tsp

Cumin - 1 tsp

Garlic - 4 cloves minced

Lime - 1/2

1. Chop onion, pepper, & broccoli. Combine with chickpeas in a large bowl.

2. Put in oil & soy sauce, stir, and throw in spices.

3. Bake at 425 for 20 min.

4. Add garlic, stir & bake for another 15 min.

5. Add Lime Juice

Pork Tenderloin & Kiwi Fruit Salsa

Pork Tenderloin - 6oz

Kiwi - 2

Pineapple - 1/2 cup

Cilantro

Salad Greens - 1 Cup

Corn - 1 ear

Lime Juice - 1 lime

Olive Oil - 2oz

1. Add Olive Oil to pan, cook Corn & Pork (roughly 3-4 min/side).

2. Dice Kiwi & Pineapple, add Lime Juice

3. Cut kernels from corn and add to salad greens. Place pork on top.

 

You can add any dressing you'd like, just be conscious of the calories.

I personally like it just with hot sauce and add the fruit salsa on top.

Lean Beef Stew - Instant Pot

Ground Beef (93/7) - 2 lbs

Baby Carrots - 2 bags

Celery - 1 bag

Smoked Paprika - 2 tbsp

Apple Cider Vinegar - 2 cups

Pepper to taste

Instant Pot

Venison - 1 1/4 lbs

Brown Rice - 1 1/2 cups

Water - 3 cups

Broccoli - 18 oz

Gouda Cheese - 2 oz

Spices - Onion, Garlic, Pepper

1. Brown Venison using "saute" put Seasonings on top

2. Add Brown Rice, Water, cook using "rice" setting

3. Mix in Broccoli and Gouda, stir everything together, seal lid and place on "keep warm" until broccoli is warm

Nacho Burger

Ground Beef (90/10) - 1/4 lb

Wheat Bun - 1/2

Sliced Smoked Gouda Cheese - 1 slice

Salsa of choice - 2 tbsp

Jalapeno - 1/2 oz

Sea Salt & Lime Chips - 4 chip

Weber Carne Asada seasoning

1. Season Beef, form into patty and cook

2. Toast Bun and top with Cheese, Salsa, Jalapeno and chips

Open Face BBQ & Fried Egg Burger

Ground Beef (90/10) - 1/4 lb

Wheat Bun - 1/2

Egg - 1 large

Sliced Smoked Gouda - 1 slice

Weber Gourmet Burger Seasoning

Jalapenos - 1 oz

Honey BBQ Sauce

1. Season Beef, form into patty and cook

2. Fry Egg and place on top of Burger

3. Toast Bun and top with Cheese, Jalapenos and BBQ

Smokey Pork Loin - Instant Pot

Pork Loin - 2.5 lbs

Salt/Pepper/Paprika/Onion/Garlic Powder - to taste

Chicken Broth (Pacific Organic) - 2 cups

Liquid Smoke - 2 tsp

Worcestershire Sauce - 1 tbsp

*Makes 10 Servings

1. Season Pork with spices

2. Using "Saute" function, sear Pork on all sides (about 1-2 min each).

3. Take out pork and cut into 3 chunks

4. Add Broth pot and scrape off pieces on bottom. Then add pork along with Liquid Smoke and Worcestershire.

5. Cook on manual for 4 min (sealed) and let naturally release.

Homemade Taco Shells

Masa Harina Corn Flour - 1/4 cup

Water - 2 cups

Salt - 1/2 tsp

*Makes 12 Shells

1. Mix Salt into Flour. Slowly add water, mixing - goal is to have "springy" batter, not hard or very soft

2. Let sit for an hour

3. Form into even balls

4. Use tortilla press to flatten

5. Heat griddle and spray, cooking about 1-2 min each side

2. In pot, heat Pasta Sauce with Onion, Peppers and Olive Oil.

3. Heat pan over medium heat and cook Meatless Meatballs.
